Fettuccine Alfredo Loaded with veggies
Creamy, dreamy, dairy-free
Serves: 4 | Time: 30 minutes
You’ll need
8–10 oz GF pasta (fettuccine/linguine/fusilli)
3 tbsp olive or avocado oil
4 garlic cloves, minced
4 tbsp arrowroot (or AP flour if not GF)
1¾–2 cups unsweetened plain almond milk
½ tsp sea salt + ½ tsp black pepper (to taste)
¼ cup vegan parmesan (plus more for topping)
4–6 tbsp nutritional yeast
½ tsp garlic powder
Optional add-ins: peas, broccoli florets, mushrooms (sauté first)
Let’s Make It
1. Cook pasta in salted water; drain.
2. Sauté garlic in oil (medium heat, 30–60 sec).
3. Whisk in arrowroot/flour; cook 1 minute. Slowly add almond milk, whisking smooth.
4. Blend sauce with salt, pepper, vegan parm, nutritional yeast, garlic powder until silky.
5. Return to skillet; simmer till thick and glossy. Adjust with milk (too thick) or a little slurry (too thin).
6. Toss with pasta and veggies; warm through. Top with more parm and red pepper flakes.
Pro Tip: A splash of lemon brightens richness.
Make It Nut-Free: Use oat or soy milk; skip nut-based parm and lean on extra “nooch.”
