Spaghetti With Impossible Meat Sauce
Weeknight classic, plant-based upgrade
Serves: 4–6 | Time: 35 minutes
You’ll need
12 oz spaghetti
12 oz Impossible Ground Beef
2 tbsp olive oil
1 onion, finely diced
3 garlic cloves, minced
1 carrot + 1 celery stalk, finely diced (optional)
1 (28-oz) can crushed tomatoes
2 tbsp tomato paste
1 tsp dried oregano
1 tsp dried basil (or 1 tbsp fresh)
½ tsp red pepper flakes (optional)
1–2 tsp sugar (optional)
Salt & black pepper, to taste
Fresh parsley or basil, for garnish
Vegan parmesan or nutritional yeast (optional)
Let’s Make It
1. Boil pasta in salted water; save 1 cup pasta water; drain.
2. Sauté onion (plus carrot/celery if using) 5–7 min; add garlic 1 min.
3. Brown Impossible 4–5 min.
4. Stir in tomato paste 1 min; add tomatoes, herbs, flakes, sugar, salt, pepper. Simmer 15–20 min.
5. Toss pasta with sauce, loosening with pasta water as needed.
6. Finish with herbs and vegan parm/nooch.
Pro Tip: A splash of balsamic at the end adds depth.
