Creamy Vegan Overnight Oats
Set it tonight. Thank yourself in the morning.

You'll Need
• ½ cup rolled oats (gluten-free if needed)
• ½ cup unsweetened plant milk (almond, oat, soy, or coconut)
• 1 tbsp chia seeds
• 1 tbsp nut butter (almond, peanut, or cashew)
• 1 tsp maple syrup or 1–2 soft Medjool dates, chopped
• ½ tsp vanilla extract (optional)
• Pinch of cinnamon
• Toppings: fresh berries, banana slices, granola, shredded coconut, or nuts
Let's Make It
1. Stir oats, plant milk, chia seeds, nut butter, maple syrup, vanilla, and cinnamon together in a mason jar or airtight container.
2. Seal and refrigerate overnight, or for at least 4 hours.
3. In the morning, give it a good stir and splash in a little more plant milk if you like it looser.
4. Add your toppings and enjoy cold—or warm it gently on the stovetop or in the microwave for 60–90 seconds.
Pro Tip: Prep 3–5 jars on Sunday and breakfast is handled for the whole week. Swap the nut butter for sunflower seed butter to make it nut-free.
Make Ahead: Keeps well in the fridge for up to 4 days. Add fresh fruit just before eating.
