Spicy Sesame Coleslaw

Crisp, vibrant, and full of bold flavor

Serves: 4–6 | Time: 20 minutes

You’ll need
• 4 cups green cabbage, thinly sliced
• 1 cup purple cabbage, thinly sliced
• 1 large carrot, shredded
• 3 green onions, sliced
• ¼ cup fresh cilantro, chopped

For the dressing
• 3 tbsp tahini
• 2 tbsp rice vinegar
• 1 tbsp tamari or soy sauce
• 1 tbsp maple syrup
• 1 tbsp toasted sesame oil
• 1–2 tsp sriracha (adjust to taste)
• 1–2 tbsp warm water (to thin)

Optional add-ins
• toasted sesame seeds
• crushed peanuts or cashews
• shredded red bell pepper

Let’s Make It

  1. Add cabbage, carrot, green onions, and cilantro to a large bowl.

  2. In a separate bowl, whisk together tahini, rice vinegar, tamari, maple syrup, sesame oil, and sriracha.

  3. Add warm water a little at a time until the dressing is smooth and pourable.

  4. Pour dressing over the slaw and toss well to coat.

  5. Let sit for 10–15 minutes to allow the flavors to come together.

Serve It With
Grain bowls, tacos, wraps, or as a fresh side for any plant-based meal

Pro Tip
Slice the cabbage extra thin for the best texture. It helps the dressing cling to every bite and gives that light, restaurant-style crunch.
