Vegetarian Split Pea Soup
Simple, hearty, and deeply nourishing
Serves: 4–6 | Time: 30 minutes
You’ll need
• 1 tbsp olive oil or water
• 2 large onions, chopped
• 1 tsp sea salt
• 2 cups dried split green peas, rinsed
• 5 cups water or vegetable broth (plus more as needed)
• Juice of 1 lemon
Optional add-ins
• smoked paprika
• chopped spinach or kale
• sliced green onions
• toasted almonds
• drizzle of olive oil
Let’s Make It
Heat olive oil or water in a large pot over medium heat.
Add onions and salt, and cook until softened.
Stir in split peas and water or broth. Bring to a boil.
Reduce heat and simmer for about 20–25 minutes, until peas are tender.
Scoop out about half of the soup and set aside.
Blend the remaining soup until smooth, then stir the chunky portion back in for texture.
Add lemon juice and adjust seasoning to taste.
Serve It With
Crusty bread, a simple salad, or roasted vegetables

Blend only part of the soup. That mix of creamy and chunky gives it that perfect, satisfying texture.
