Vegan Tostadas

Crispy, fresh, build-your-own favorite

Serves: 4 | Time: 20 minutes

You’ll need
• 8 corn tortillas or tostada shells
• 2 cups refried beans (make sure they’re vegan)
• 1 avocado, diced
• 1 cup tomatoes, diced
• ¼ cup red onion, finely diced
• ¼ cup fresh cilantro, chopped
• 2 tbsp lime juice
• ½ tsp cumin
• ½ tsp salt
• 1 cup shredded cabbage or lettuce

Optional add-ins
• vegan queso or sour cream
• sliced jalapeños
• guacamole
• hot sauce
• vegan cheese

Let’s Make It

  1. If using tortillas, lightly brush with oil, sprinkle with salt, and bake at 400°F for 8–10 minutes until crispy.

  2. In a bowl, mix avocado, tomato, red onion, cilantro, lime juice, cumin, and salt to make a fresh salsa.

  3. Warm the refried beans on the stove or in the microwave.

  4. Spread a layer of beans onto each tostada shell.

  5. Top with shredded cabbage and a generous scoop of the avocado salsa.

  6. Add any extra toppings you love and serve immediately.

Serve It With
• vegan queso and chips
• Mexican rice or cilantro lime rice
• simple black beans
