Sweet Vegan Pulled Pork Sandwich

You’ll need
• 2 cans (20 oz total) young green jackfruit in brine, drained and rinsed
• 1 tbsp olive oil
• ½ small yellow onion, thinly sliced
• 3 cloves garlic, minced
• 1 tsp smoked paprika
• 1 tsp chili powder
• ½ tsp cumin
• ½ tsp salt
• ¼ tsp black pepper
• ¾ cup BBQ sauce (plus more for serving)
• 1 tbsp maple syrup
• 1 tbsp apple cider vinegar
Optional add-ins

Let’s Make It
Use your hands or a fork to shred the jackfruit, removing any tough core pieces.
Heat olive oil in a skillet over medium heat. Add onion and cook until soft.
Add garlic, smoked paprika, chili powder, cumin, salt, and pepper. Stir until fragrant.
Add shredded jackfruit and cook for 5–7 minutes, breaking it apart as it softens.
Stir in BBQ sauce, maple syrup, and apple cider vinegar.
Simmer for 10–15 minutes until saucy and tender.
Lightly mash again to create that pulled texture.
